ingredients

Serves 8

For the Crust:

  • 2 cups all-purpose flour

  • 1 tsp salt

  • ¾ cup chilled butter flavored Crisco shortening

  • 4 to 8 tbsp ice cold water

For the filling:

  • 4 eggs

  • 1 ½ cup half and half

  • 1 tbsp butter

  • 6 slices cooked and crumbled bacon

  • ½ small onion finely chopped

  • 2 cups finely shredded mozzarella cheese

  • ¼ tsp dry mustard

  • ½ tsp salt

  • ½ tsp nutmeg

  • ½ tsp cayenne (you can eliminate if you don’t like spice)

making the crust

  • Blend the flour and salt in a large bowl. Cut the shortening into the flour mixture using a pastry blender or a fork until small pea size crumbles form

  • Stir in the chilled water with a fork just enough that the dough holds together

  • Wrap in plastic wrap and refrigerate for 30 minutes

making the quiche

  • Preheat oven to 425 degrees

  • After the crust has chilled, roll out crust into a disc shape and place on pie dish

  • Melt the butter and sauté the onions until soft

  • Begin layering the onion, bacon and cheese using half at a time

  • Mix the eggs, half and half and seasonings into a ‘custard’

  • Pour the ‘custard’ over the layered meat and cheese mixture

  • Bake in a preheated oven for 15 minutes

  • Turn down the oven to 350 degrees and bake for an additional 35-40 minutes — until a knife inserted in the center comes out clean

  • Let the quiche cool for 10 minutes and then serve with fruit or salad
