Color Outside the Lines

As temperatures increase outside, turning the oven on is not likely a go-to on the spring and summer cooking list. Here is a chilled meal to try that requires minimal kitchen tools, leaving your kitchen just as chilled as the dish.

ingredients

  • 1 15 ounce can of black beans

  • 1 15 ounce can of chickpeas

  • 1 15 ounce can of red kidney beans

  • 1 handful of spinach

  • A red onion

  • Roasted red peppers

  • Fire-roasted corn

  • Grape tomatoes

  • Lime

  • Salt and pepper

Start off by opening and draining the cans of beans and chickpeas in a colander. Then, go ahead and chop the veggies and spinach. Be sure to only slice the grape tomatoes in halves. Combine drained beans, chickpeas and vegetables in a large bowl and mix. Season with salt and pepper to taste and squeeze in the juice of the lime.

To enjoy the maximum flavor, let it sit overnight in the refrigerator.

If you’d like to add protein with this a salad, grilled chicken, grilled shrimp or even skirt steak would complement it nicely.

Also, don’t be afraid to substitute ingredients or add more, like jalapenos for a bit of heat.
